Grains have been known to mankind since the beginning of time and today they are still a basic food that sustains the world’s population. In fact, the growth in the importance of grains in the world’s diet continues, despite Western developments in agriculture and the production of alternative foods. Although climatic changes and political upheavals threaten to disrupt the lives of half the population of the world, people survive thanks to the cultivation of a few grains. Every society has made the choice of which particular grain to cultivate, depending on what is suited to the local soil, water and farming skills.
