While every effort has been made to use ingredients available in the ethnic departments of major grocery stores or at the growing numbers of ethnic grocers popping up everywhere, some ingredients may be harder to find than others.
Some ingredients are available fresh or canned, such as lychee; others should definitely only be used fresh, such as lemongrass. Others, like ginger root, should be bought fresh and cut for each use. Do not use ground ginger in our recipes, unless directed.
Bakery products like lavash, kataifi, and eggroll wrappers are available at many major supermarkets in the ethnic food sections, or seek them out at specialty markets near you.
