Within limits, the amount of sugar used in making these muffins is not critical. The amount may be increased up to ½ cup for those who enjoy very sweet muffins.
Cheese muffins may be made by eliminating the sugar and adding ⅔ cup grated sharp Cheddar cheese before adding the milk and egg.
Nut muffins may be made by adding ½ cup chopped pecans or walnuts to the original recipe before adding the milk and egg.
