How to Knead Dough

When dough is turned out onto a table or board to be kneaded, shape it into a ball. Use the heels of the hands and push down heavily on the ball, pushing the dough away from you.
Give the dough a quarter turn and fold the upper half over toward you. Push down again as before with the heels of the hands. Give the dough another quarter turn and fold the upper half over as before. Keep up this motion, kneading repeatedly until the dough is springy and elastic. It may require a hundred kneading turns or more. But it’s fun.
