Hard grating cheeses such as Parmesan always taste better if they are freshly grated just before using. In metropolitan areas, at least, wedges of Parmesan cheese are available wherever fine cheeses are sold and at all good Italian groceries. The cheese may be grated, a few cubes at a time, in an electric blender, in a small rotary cheese mill, or on standard upright graters.
