To crack an egg, gently but firmly tap the middle of the egg against a hard surface such as the edge of a table, the rim of a heavy bowl, or the kitchen sink.
Hold the egg over a mixing bowl and break the egg in half, using the fingers of both hands.
If the egg is to be separated, use half the eggshell as the cup which retains the yolk. Gently shift the yolk from one half of the shell to the other, letting the white fall into the mixing bowl.
Finally, run the forefinger around the rim of the shell to completely catch the egg white and drop the egg yolk into a mixing bowl, saucepan, or whatever utensil it is to be used in.
