The amount of fat in a cake makes a huge difference to the texture. Not enough fat and the cake will be rubbery and chewy with big uneven air pockets. A good fat level will give small even air pockets and a velvety soft texture. With too much fat, it becomes denser and noticeably greasy in taste.
