Food is extremely personal — what we eat is tied to so many things. A compilation of religion, culture, place, family, and memories influence what we each see as tasting good. This element, taste, is critical; if we are to achieve any voluntary shifts in our food system, we need to strongly consider taste — the chef’s domain, passion, and livelihood.
Chefs have a growing influence on what we eat — globally, people increasingly eat food prepared by someone outside of the home, which means chefs play an important role at the heart of our food system. Their voices impact trends as we look to them to help us address health concerns like allergies and special diets.
