I know, I know, my collection of wooden peperkoek (or speculaas/Lebkuchen) moulds is rather impressive. But just like for my antique waffle iron obsession, I am not expecting you to go and spend all your birthday cash on antique moulds. However, if you search online you can find many affordable simple wooden moulds that will give you the satisfaction of printing dough. In fact, modern carved moulds will yield a much better result as they are made for modern dough.
That said, it is absolutely not a requirement to buy a wooden peperkoek mould. You can just use a cookie cutter instead and make fun shapes. I am partial to hearts as this is still very much a historical shape (though dinosaur-shaped speculaas will go down a treat with children). I want you to enjoy the recipes in this book. And while for some people this means the joy of adding to their collection of kitchen tools to play with, to others this is not as important and that is totally fine.
