In this book I am giving an overview of the landscape of waffles of the Low Countries. Winter is waffle time, as stated in Huishoudelyk woordboek (1743) and, indeed, waffles appear at all feasts from Saint Martin to Easter. The waffle is spotted in paintings depicting winter festivities as a clear symbol for revelry. Even for the generation of my dad, born in the 1950s, waffles still meant good cheer.

There is no such thing as ‘The Belgian Waffle’, even though in America Belgian waffles are incredibly popular. There is a lot of confusion around which waffle is the true Belgian.
