There are two kinds of waffle irons: rectangular grid waffle irons and rectangular or round rimless flat irons which make paper-thin wafers, often engraved with a coat of arms, family and heraldic crests, city crests, mottos, wishes and biblical scenes, but also the names of a couple often in combination with a date and hearts, flowers, the tree of life11 and even windmills (on a Low Countries iron from the 18th century).

Another remarkable engraving in the irons is the house mark, or house logo, made from rune-like letters. The Gruuthuse also has an 18th-century flat iron with a ‘happy New Year’ motto engraved into it, and similar examples can be found in Germany too. Flat irons like these can also be found in Belgium, the Netherlands, Germany, France and Scandinavia.
