Spring

Spring in Japan truly is a season bursting with flavours and lively colours. The elegant but fleeting cherry blossom -Japan’s national flower - sweeps across the country stretching from north to south, bringing joy to all. The delicacies of spring abound from the mountain top to ocean bottom. Bamboo shoots find their way up through the earth, mountain vegetables peek out of the ground in the woods, and clams, dug up along the coast, are at their best.
