Sawaniwan is a soup dish containing a variety of ingredients, usually including vegetables and pork or chicken. Its name in Japanese originated from the word ‘moridakusan’ which means many things are piled up’ and is a perfect description for sawaniwan as it sees all the best seasonal vegetables brought together in one bowl.
The fresh aroma and al dente vegetables are to be particularly savoured in this dish. Using takenoko (bamboo shoots) and mountain vegetables like udo (a fragrant Japanese plant), the sawaniwan served at Tsukiji Tamura in spring aims to produce an unmistakably fresh flavour characteristic of the season.
