Miso is an essential seasoning in Japanese cuisine. From soups to stews or stir-fries, it can be used as a seasoning or marinade. In Japan, there are over 1,500 kinds of miso from various regions. To accommodate my father’s job and my school transfers, our family moved several times across the east and west of Japan.
Miso was the first ingredient I noticed tasted different across different regions. Our family used salty brown miso from Tokyo, where my grandmother was from. I was surprised to find that the taste of miso became sweeter as we went westward.
