Bonito flakes, or katsuobushi, are used in many ways for Japanese food. It is commonly used as garnishing and as a basic ingredient for Japanese fish stock (dashi). These flakes come from the bonito fish, which are filleted and then smoked several times.

The fillets will then be dried and matured before they are shaven into flakes. In the past, people used to keep a big chunk of bonito fillets at home, which they shaved when needed. Today, people usually buy shaved bonito flakes from the supermarket.
