I remember as a kid rushing through any meal that had dessert at the end. I didn’t matter if it was a slice of my mother’s warm rum cake with that wonderful caramelized pecan crust and a single scoop of vanilla ice cream on top that soaked into the pores of the cake like a sponge or my grandmother’s simple fruit cocktail strawberry Jell-O delight (the word delight makes it taste extra special, just in case you didn’t know) that she’d give me after one of her famous tuna sandwiches. Dessert time was always a happy time.
