Welcome to main courses, often seen as the most important part of the meal. I’ve broken this chapter down into sections: fish, poultry and meat, and vegetarian dishes and vegetables. With all of the dishes featured in these categories there’s room for change. You should not be over-strict in keeping to the recipe, especially if you feel like chopping, changing and swapping! And if the results are better – send me the recipe!
There are also lots of main courses that don’t really need an accompaniment, that is, a vegetable served just out of habit to fill the plate. Vegetables should also stand as complete dishes on their own – sitting proudly on the table, with flavour simply oozing out of the dish.
