Fish and Chicken Stocks

Alternatives to these can be found in the chill cabinet of most quality supermarkets. They are sold in plastic tubs, each containing about 284ml (9–10 fl oz). The beauty of these is they taste great, they have a good colour and jelly texture and they are sold as stocks ready to use. They really are the best I’ve found but, if you can’t get hold of them, there are also some good-quality stock cubes.
