Every book is ultimately the product of a community, of editors and copy editors, art directors and photographers, stylists and cooks, experts and enthusiasts. So here, I’d like to thank the community within this community cookbook.
First, thanks to Louie Schwartzberg, who is the heart of the project. It was Louie’s notion that mycelium is a metaphor for collective action, a notion that gave rise to the idea of a community cookbook. Thanks to Raoul Goff from Insight Editions. He understood this idea perfectly from the very beginning and was constantly relaxed and supportive.
