Seasonality in produce has largely been eliminated, but it is still a good idea to choose produce according to season. That way you can be sure you are getting the best quality, most flavour-some produce, for the best price. Vegetables are best fresh and young and should require a minimum or cooking.

The great wholesale markets of large cities receive produce each day from all over the world. Seasonality in produce has been largely eliminated by advances in food-growing technology and transport. Some of these advances have adversely affected the quality of the food we purchase.
