Game meats, such as kangaroo, are lean, but rich in flavour. Kangaroo is now readily available in cryovac (vacuum sealed packs). Do your bit for the environment by eating wild boar and rabbit. If you prefer more traditional game dishes, try pheasant that has been hung to intensify its flavour, stuffed guinea fowl or roasted wild duck.

The hunting of game is still controversial but I think only because it is usually thought of in broad terms. The continual husbandry of beef and sheep can have devastating ecological consequences, and in such circumstances we are better encouraging the use of the land for the raising of game.
