Terraces of brilliant green cascade down steep hillsides. Pools of water shimmer at the base of rice plants, making the whole vista iridescent. It would be hard to place this timeless scene in history as workers in straw-coned hats stoop in mud to tend the rice by hand, but this is modern Indonesia where growing rice is the work of millions.

Indonesia is the third largest producer in the world, yet still imports rice to keep up with the huge appetite. On average each person gets through 150 kg (330 lb) per year, and this doesn’t account for the Eastern Islands where sago, cassava or corn are the staples. The word for cooked rice, nasi, is synonymous with food.
