I have always been fascinated with Persian history and Arab food lore, and the impact it has had not only on the Middle Eastern region but across the world. Here food has a much greater significance than mere sustenance, as is demonstrated by the Arab propensity for hospitality and generosity. Bread is considered sacred and salt symbolic. Indeed, I was told that it is never an accident if food is served without salt, but rather a tacit warning that your host intends to kill you after you finish eating! Since I strongly believe that it is the cook’s responsibility to properly season the food – anything less seems an insult – I couldn’t help but smirk when I heard this. Such folklore offers insights into the rituals of the Middle Eastern table.
