For ease and convenience, I like to use dried yeast. All recipes in this book use fast-action dried yeast. It’s a granulated style yeast and comes in 7g/2¼ teaspoon sachets and can be added straight to dried ingredients. Don’t confuse this with active dry yeast, which has to be ‘bloomed’ in warm water before using.
