  • To measure brown sugar, pack it firmly into a measuring cup. Level with a straight-edge knife.
  • For 1 cup of brown sugar, you can use 1 cup granulated sugar plus 2 Tbsp molasses.
  • How low can you go? You can reduce the amount of sugar called for in recipes by up to 25%. However, the moisture, texture and color of baked goods may be affected.
  • You can usually replace up to half the sugar in baked goods with granular Splenda with excellent results. To replace brown sugar in recipes, use half the amount of Splenda Brown Sugar Blend. However, artificial sweeteners don’t add texture or bulk to baked goods. If you substitute granular Splenda completely for sugar, your baked products will be lower in volume, drier and paler in color.
  • Baking time is usually shorter with Splenda than with sugar. Check cakes 7 to 10 minutes before the completion of a recipe’s expected baking time.
