Soups play a very important role in Oaxacan meals, though not the same role as the dainty consommés and creamy puréed soups we in this country often serve in small amounts as first courses.

Small portions are definitely not appropriate when it comes to serving Oaxacan soups! Usually the authentic way to serve them is as meals in themselves. Also, people in Oaxaca don’t necessarily draw distinctions between soups and stews, or even soups and sauces. Many of the important sauce-based dishes can acquire the nature of soups by simply adding liquid. In fact, some dishes we’d call soups are known as molitos (“little moles”).
