Once the juicy ingredients like tomatoes and onions have been added, a mole should be refrigerated and kept tightly covered if it is not to be used at once. All the sauces in this chapter except the Mole Verde can be stored in the refrigerator for at least 4 to 6 days, or in the freezer for up to 6 months. Mole Verde must be used as soon as the purée of herbs has been added.
