For Mexicans, beverages can be not just thirst-quenchers and accompaniments to meals but meals on their own or exciting marriages of ingredients that U.S. consumers would not associate with drinks.
Since the local drinks often go off in directions surprising to non-Mexicans, they are usually slighted in Mexican cookbooks published in this country. The general assumption seems to be that nobody here would understand them or you couldn’t get the ingredients anyhow. However, I feel that these beverages are a major keynote of the cuisine in Oaxaca (even more than other parts of Mexico) and nowadays U.S. cooks are not timid about embracing new ideas.
