More than 60 percent of Nepal’s population depends on agriculture for their livelihood and vegetables are important crops. The word “tarkaari” is used for cooked or uncooked vegetables. A typical Nepali meal consists of rice, lentils, and some kind of side vegetable dish. Vegetables are generally cooked with a minimum amount of spice and seasonings. They are simply fried, deep-fried, sautéed, mixed with other ingredients, made into gravy, made into patties, or stuffed. They are also made into pickles, salads, snacks, and even desserts. Most Nepali households do not store vegetables, so they are bought fresh every day.
