Note that all spoon and cup measurements used in this book are level. It is not easy to convert with absolute accuracy measurements for the kitchen, but absolute accuracy is usually not required (except for sauces, cakes, and pastries). The tables below give the nearest convenient equivalents in both metric and British imperial measures, while the formulas give a more precise conversion factor. British dry measures for ounces and pounds are the same as American measures. Liquid measures, however, are different.
