The people of Chile love to eat locally sourced food, and in a country that produces such a diverse range of ingredients we are often spoilt for choice. In the major cities the ferias, or street markets, take place in different locations every day, selling fresh fruit, vegetables, meat, fish and shellfish, dairy produce and some speciality items such as palm honey or kollongka eggs. Among the many favourite ingredients are tomatoes, potatoes and fresh corn, which appear again and again in traditional recipes, along with beef or other meats, and of course Chile’s wonderful wine.
