Fire is one of the greatest assets humanity has ever worked with but we must treat it with respect. Understanding that it will not immediately do exactly what you want it to do is the beauty of cooking with fire. The best you can do is learn to understand fire. It is like a dance. By following its lead, fire cooking will teach you patience, intuition, and adaptability.
While cooking my recipes, you will find yourself rekindling a dying fire, taming one that’s out of control, or even feeling stuck before getting started—struggling to get a spark. When you feel that way, just know we have all been there. (Keeping me accountable, my wife can attest to the number of cooks I have ruined because of too little fire, too much fire, or no fire at all.) Every painstaking step it has taken to learn to master fire cooking, I have walked. The best part is, I feel I have not mastered it all and have many more dance steps to learn!
