Winner of the Gourmand Special Category Cookbook Awards for Peace and for Culinary Tourism in 2018, with her debut cookbook The Galilean Kitchen, Ruth Nieman has established her position as a Middle Eastern food writer, having grown up with traditional cuisines handed down from generations of Jewish and Arabic matriarchs. Her recipes showcase traditional Arabic dishes using local ingredients from rural Galilee, and are inspired by women from the Druze, Muslim, Christian and Bedouin communities, so cultural flavours ooze from every page.
