In France, the word salade doesn’t necessarily imply a green salad, the way “salad” often does in America, but simply a mixture of vegetables. An example of a salade is the classic French râpée (rah-PAY), a grated raw vegetable salad that can be a mixture of anything, but often relies on just one main vegetable—carrots, celeriac (celery root), and cabbage are our favorites. Râpées are traditionally a side dish for grilled or roasted meats, but they can also be served on their own. We think it’s genius; it gives often-overlooked vegetables star status in the form of a simple slaw.
