When I lived in Paris in the early 2000s, there was a little restaurant on rue du Cherche-Midi called Cuisine de Bar. When Marge visited, we used to go there when we needed a meal that was simple but still delicious, and their tartines—the French take on an open-faced sandwich, served over toasted country-style Poilâne bread—were always a treat. At home, tartines make good use of items already in your fridge and pantry. Vary them depending on your taste and what you have available. Below are a few of our favorites.
