These Italian staples have a long tradition in Provençale cooking, due to the proximity of this region to Italy. In fact, pasta and risotto are everyday dishes all over France these days, even in fine restaurants. While the recipes in this chapter are essentially Italian, they have a distinct French palate.

In the early days of my career, in the 1970s, I was lucky enough to live among an Italian community in the Melbourne suburb of Carlton, where the main thoroughfare of Lygon Street was lined with food shops.
