Soups are a huge part of the daily Polish menu. Traditionally, dinner, eaten around 4:00 pm, includes a main dish and a soup that precedes it. Soup is considered a starter, and there are a lot to choose from. Polish cuisine boasts an impressive range of soups for every season and occasion. On hot days, we like to cool down with bright pink Chłodnik litewski (Chilled Beet Soup with Cucumbers, Radish, and Dill), and when we need something filling, we prepare Żurek, a sourdough soup typically made with potatoes, egg, and sausage, or, as in my version, with dried mushrooms.
