Pot au feu, literally “pot on the fire,” is a meal unto itself. It is more traditional French home cooking than what we consider haute cuisine, but it is, nonetheless, part of the classic culinary repertoire. This quintessentially French dish provides all of the elements of a complete meal — the soup (from the broth), boiled meat, and vegetables (usually root but leafy greens can also be added). A very ancient dish, some version of this boiled dinner has been seen throughout the history of French cuisine.
