The word assiette literally means plate, and an assiette de crudités refers to a plate of separately prepared raw, simple salads. In the recipes that follow, it may not be possible to present all of the salads at once, but there should be at least five on a plate. It is particularly important that a pristine workstation be set up and that a complete mise en place be organized before beginning to cook.
