I suppose you could call this the “More Mediterranean Main Course” chapter, although one of the most classically Med of dishes, our ratatouille, does include a chilli for added kick. This chapter certainly draws more on European culinary traditions than on those of the Middle, Near and Far East.
Nevertheless, even here we try to offer as much variety on the plate as possible. It is more difficult to do this with many Mediterranean dishes, including pastas and risottos, but we still try to ensure that every mouthful offers the chance to explore unusual combinations that present the palate with a flavour adventure.
