Sad to say, vegetarian restaurants are often associated with stodgy, heavy desserts that can seem like an apology for the fact that the cook thinks he hasn’t fed you properly! We try to provide a range of puds to suit different appetites, occasions and seasons.
We like desserts to be light and just sweet enough to switch off the appetite. The Indo-Arabic attitude towards sweet dishes is that they should freshen the palate and please the eye. We play with flavourings in puddings as much as we do in our savoury dishes, sometimes adding a little spice. Our passion for perfumed flavours such as orange blossom and rose waters, cardamom, lemongrass, lavender and elderflower, comes to the fore here too, especially when cooking with fruit.
