Remarks: Plombières is almost exactly the same as cream, except that gelatin is not added and it is frozen almost like ice cream. That is, freeze boiled cream with egg yolks in a mold until half ready, then mix with whipped cream, cover tightly with a lid, and set on ice with salt. Sprinkle more salt and ice all around, cover, and set aside for two or three hours. Before serving, dip the mold into hot water, wipe it off on all sides, turn out onto a platter, and serve immediately. Zephyr is the same except, just before serving, whip it over ice into a foam, pile onto a platter, smooth it out, and serve at once.
