A good supplier will offer whole birds, which usually work out cheaper, or a variety of cuts. If you buy from a butcher, you can buy a whole chicken and ask for it to be prepared in any way you want so you have one less thing to think about before you start cooking. Most butchers will bone your chicken thighs to save you time, and even give you free carcases for stock. Just ask! They normally give them to restaurants or dispose of them. Once you’ve made the stock you can freeze it down in batches to keep until you need it.
