ANGLO-SAXONS BELIEVE that all French cooks can make wonderful omelettes. This is almost true but certainly the best omelettes we have ever had anywhere are at our local auberge, run until recently by Louis Mazières and his wife. Louis, in fact, played a catalytic part in the purchase of our farmhouse because he provided the base and much of the practical help from which the negotiating and buying was carried out. We have been firm friends with his family for over twenty-five years. Their younger son Jacques, whom we helped to read at the age of five, has now taken over the kitchens of the hotel.
