For those unaware, the American bratwurst is a very large, fresh, uncured pork sausage. Wisconsin has a large number of residents of German ancestry, and this sausage is a direct result of that heritage. Although German in name, the American version is a bit different. Germany is home to more than a thousand varieties of sausage, or Wurst, but the version that has made its mark on Wisconsin is the bratwurst from southern Germany. The sausage may date back as far as the fourteenth century and is similar in flavor to the famous Nuremberg bratwurst. The Nuremberg is a very thin sausage, and legend has it that in medieval times the family of a jailed political dissident made them small enough to fit through the keyhole of his dungeon door. When this sausage traveled to the American Midwest, it grew in size, substantially, and can now be found at every ballpark, backyard party, and street fair.
