In the original version of this book, I included a recipe for a patty melt that was a combination of one from my youth and the classic version from California. It was disingenuous to refer to that burger as a “patty melt,” and I’m here to correct my mistake. The elements that make up the classic patty melt should not suffer the fate of poetic license. There is only one way to make this burger and proudly call it a patty melt. As is so often the case, we look to history and we end up in Los Angeles.
