Spices keep for a wonderfully long time at room temperature, but their flavors diminish with age. Nothing in this section will go bad; it will just be less robust and nuanced. Like with all things kitchen, it is helpful to date when you opened a jar of spices. This tells you a) how long you’ve had it, b) how quickly you are using it, and c) if you have two of the same spice, which one to use up first. All spices degrade more quickly if stored in high heat or direct sunlight, so it’s best to keep them away from the stove and off of window sills and store in an airtight container.
