If boiling a bunch of beans in plain water is as simple as it gets, these one-pot recipes add a lot of complexity of flavor with only a bit more work. Each version starts with a foundational sofrito—aromatics simmered in a fat. Garnish the beans with whatever you like, but of course, I’ve listed suggestions for what I would do.
