Halee Wepking, her husband John, and Paul Bickford own and operate Meadowlark Organics in Ridgeway, Wisconsin. In addition to growing a wide variety of heritage wheats and beans, they mill flour in their stone mill. I wanted to talk with Ms. Wepking because Meadowlark Organics is one of a growing force of regional millers converting their crops to ingredients and creating alternative markets for flours, grains, and beans. She spoke on the phone with me in early June 2020 while waiting out the rain to get back into the fields.
