Though the title of this chapter translates as ‘pantry’, this section not only refers to store cupboard staples like sauces and condiments, but other recipes that will come in useful time and time again, like bread, pickles and types of pasta.
This section embodies the Italian approach to cooking, about reusing ingredients and not wasting or throwing anything away. For instance vegetables that aren’t at their freshest anymore can be pickled, and stale bread can be made into crisp breadcrumbs.
You’ll save money by making your own bread and condiments, but more than that you’ll gain a sense of satisfaction after making something for yourself. Seeing a loaf rise and grow in front of you is a wonderfully simple pleasure. I guarantee it will taste better because you made it.
